Gluten-free baking just got greener! Here’s a simple cookie recipe to satisfy your sugar cravings, with matcha green tea powder for an added nutrient boost!
Sometimes you just really want a cookie. And if you’re gluten-free, those cravings can hit extra hard! We’ve made your life easier with this homemade cookie recipe using gluten-free flour as the base. We added a scoop of organic matcha powder for your daily dose of green tea, and topped it off with a dusting of sugar for a little extra flare. RECIPE INSTRUCTIONS: Matcha Sugar Cookies
Prep Time: About 20 minutes (plus 1-2 hrs to chill dough)
- 2 Cups gluten-free all-purpose flour (+more for dusting)
- 1 Cup granulated sugar (+ more for coating)
- ½ Cup butter, softened (not melted)
- 2 Tbsps Sencha Naturals Organic Everyday Matcha Powder
- 1 large egg
- 1 Tablespoon milk of your choice
- 2 tsps vanilla extract
- ¼ teaspoon salt
- ½ teaspoon xanthan gum (skip if your flour includes it)
- In a large mixing bowl, cream the sugar, butter, and matcha by mixing thoroughly. Add in the egg, vanilla, and salt. Beat until mixed well. Add flour and mix until well combined into soft dough.
Wrap the dough in plastic wrap and chill in the fridge for 1-2 hours.
Preheat the oven to 350 degrees F. Line a baking sheet / cookie pan with parchment paper and set aside. (You may need two baking sheets)
Remove the dough from the refrigerator, and scoop out about 1 tablespoon per cookie. Roll dough into balls and place about 2 inches apart on cookie sheet. Top the cookie with extra sugar (if desired) before placing in the oven.
Bake for 10 to 12 minutes (up to 15 if needed). Remove from the oven, and let stand for at least 5 minutes to cool before serving.
- To quickly soften butter, heat in microwave for 15-20 seconds.
- For best results, cream the sugar and butter in an electric mixer.
- Powdered sugar can also be used as a topping. For easy application, place about ¼ cup of powdered sugar in a small bowl, press the underside of a clean glass into the bowl, and press the sugar on top of cookies.
Cookies can also be topped with fruit or nuts prior to baking: try roasted almonds, dried cranberries, or chocolate chips.
